Sweet potatoes are a great source of fiber! They also contain vitamins iron, calcium and selenium. They contain an antioxidant called beta-carotene which is converted to vitamin A after consumption. So eat up and enjoy a guilt free snack!
• 4 large sweet potatoes
• ¼ cup melted coconut oil
• Seasonings to taste
1. Wash and cut sweet potatoes into bite size pieces. Place in a clean bowl. Drizzle with coconut oil and stir to coat potatoes.
2. Sprinkle with seasoning. Place on cookie sheet.
3. Bake at 350 for 20-25 minutes or until potatoes are tender and golden brown. Enjoy!
